Unable to use ESP-IDF

I will admit, I'm a noob when it comes to ESP-IDF and arduino/esp compiling in general. But, I can't get anything to work correctly at this point and have messed up enough to make my Freematics One+ (Traccar edition) useless at this point.

I'll spare some details, but where I am now is I've erased the device using esptool and I'm trying to get esp-idf to work to start over. Maybe using esptool would be possible, but I don't know where I can find the default firmware.

I have a fresh install of ESP-IDF (v5.3.1), navigate to the folder where I've downloaded/extracted the latest release, it gets a fair way through compiling and then I get fatal errors about "Touch IDF driver not supported" and "esp32/spiram.h: No such file or directory".

Claude AI seems to indicate this might be due to using too recent of a version of ESP-IDF. Is that possible? Is there a preferred version of ISP-IDF? Is there any other configuration needed?
